Chai yam's finishing technology
In order to improve economic efficiency, crude Chai yam with a diameter of 1 cm or more can also be selected for further processing. The detailed technical steps involved in the finishing process are as follows:
1. **Washing**: The yam intended for processing is placed into a water tank and thoroughly washed to remove dirt, dust, and impurities until it turns white. After washing, it is spread out on a tray and left to dry until the surface feels smooth to the touch.
2. **Fumigation**: Once dried, the yam is placed into a basket and transferred to a fumigation room for a second round of smoking. This process typically lasts one to two hours, allowing the yam to absorb the desired flavor and texture.
3. **Boring Goods**: The smoked yam is then placed into a dry pool that is about one meter deep, covered with sacks, and left to rest for an hour or two. This step helps to enhance its firmness and quality.
4. **Kneading**: The yam is carefully kneaded by hand to ensure even texture and consistency. This step is crucial for achieving a smooth and uniform finish.
5. **Pulling and Drying**: The processed yam is then placed back onto the tray and exposed to sunlight. It is aired in the morning and sorted in the afternoon before being packaged separately.
6. **Boxing**: The packaged yam is stored in a controlled environment. The boxes are emptied every two days, and the yam is kept for three to four days. When the moisture content reaches 70% to 80%, it is ready for shipping and further drying before final delivery.
After the basic processing is complete, the yam can undergo additional deep processing. The steps for this advanced stage include:
1. **Scraping**: The sun-dried Chai yam is soaked in water to soften the outer layer, making it easier to scrape off the skin using a knife. This removes any remaining dirt and ensures a clean surface.
2. **Grinding**: Each piece is individually polished with fine wood sandpaper to eliminate dry wrinkles, yellow spots, and pits. This ensures the yam has a smooth, white surface and a perfectly round shape.
3. **Trimming the Ends**: Both ends of the yam are smoothed and ground with sandpaper to remove any irregularities. Horseshoe-shaped or pothole-like defects are strictly avoided.
4. **Coating with Paste**: The yam is coated with a green bean paste mixture, which enhances its appearance and adds a unique texture.
5. **Final Drying and Packaging**: After coating, the yam is air-dried and then fully dried. Once completely dry, it is placed into moisture-proof boxes and prepared for sale through Sinotrans.
This comprehensive processing method not only increases the value of the product but also ensures high-quality standards for both domestic and international markets.
