Fresh chrysanthemum processing method
After harvesting, fresh chrysanthemums should not be stored for long. They must be sorted immediately to remove debris such as stones, grass, and other impurities. Rinse them thoroughly with clean water and spread them out in a well-ventilated area to dry. It’s important not to pile the flowers together, as this can cause internal heat and lead to rot. If processing is delayed, spread them thinly in a dry, cool, and ventilated space, but do not leave them for too long, as this may affect the final quality.
Next, once the chrysanthemums are dry, they can be placed into baskets. These baskets are typically made of bamboo, with a diameter of 30 to 40 cm and a depth of about 7 cm. When placing the chrysanthemums into the basket, ensure they are packed tightly but not overly full—too much pressure can damage the petals. A good amount is around 1,000 grams per acre, using approximately three baskets per acre to maintain even drying and heat distribution.
For steaming, use a pot that is about 80 cm in diameter, filled with roughly 3,000 grams of water. Once the water is boiling, place the chrysanthemum basket on top of the steamer. Three baskets can be steamed at a time, and the lid should be closed securely. Steam for 4 to 5 minutes, then turn off the heat and carefully remove the chrysanthemums using a hot pan. The fire must remain strong and steady throughout the process, avoiding sudden fluctuations. Change the water once during steaming to keep it clean. Be careful not to add too much water, which could cause the flowers to become soggy, or too little, which might result in under-steaming and uneven texture.
Finally, after steaming, the chrysanthemums will resemble a flat, cake-like shape. Remove them from the basket and lay them on a bamboo screen. Expose them to sunlight for 6 to 7 days, turning them every 1 to 2 days to ensure even drying. If the weather is rainy, switch to artificial drying methods to prevent moisture buildup. The goal is to fully dry the flower cakes until they are crisp and ready for storage or further processing.
